Bokit: The King of the Antilles Sandwich

The bokit is a fried sandwich, originally from Guadeloupe, which has conquered the hearts (and stomachs!) of the West Indians. Its thin and crispy dough, made from flour, water and salt, is fried until it obtains a golden and puffy texture. The bokit is then garnished with a variety of tasty ingredients, making this sandwich a complete and delicious meal.

  1. The dough: Mix the flour, yeast and salt. Add the water little by little to form a soft and homogeneous dough. Let the dough rest for 30 minutes.

  2. Shaping: Divide the dough into small balls. Roll out each ball thinly on a floured work surface, forming a disk.

  3. Cooking: Heat the frying oil in a deep frying pan. Dip the dough discs into the hot oil and fry on each side until golden and puffed.

  4. Filling: Drain the bokits on paper towels. Open the bokits in half and fill them with the ingredients of your choice.


    Tips and tricks:


    • Crispy dough: For an even crispier dough, you can add a little rum or beer to the dough.
